Messy Meatball Buns

This amazing meatball dish takes just under 20 minutes. With serving for 4 people.  


Stages 


  1. Place the 400g of minced beef onto the chopping board
  2. Place half the pesto with a pinch of salt and pepper
  3. Mix the pesto and minced beef together 
  4. Dip your hand in warm water , take a piece of meat and round a meatball up. ( the water stops the beef sticking to your hands )
  5. With a hot pan + olive oil place the 10 meatballs in 
  6. Mix the meatballs around the pan to create a nice brown colour
  7. Once the meatballs are a nice brown colour , place the plum tomatos into the pan squeezing the tomatos
  8. Mix the tomatos and meatballs together for around 5 minutes 
  9. Slice the mozzarella ball into 4mm creating 10 slices 
  10. Place the slices of mozzarella over the meatballs 
  11. Leave for 5 mins to let the mozzarella melt beautiful round the meatball
  12. While the mozzarella melting place 4 burger Buns with pesto at the top and bottom of the bun.  
  13. Now place the meatballs inside the buns with tomato sauce on the place for dunking


Ingredients Needed : 

400g Minced Beef
8 Tea spoons of green pesto 
x1 400g Tin plum Tomatos 
x1 125g Balls Mozzarella 
4 Soft Burger Buns

Indian Dish Chicken Korma

This milder Indian dish is gently warming with a delicious sweetness.
ingredients
  • Low calorie cooking spray 
  • 3 bay leaves
  • 1 cinnamon stick
  • 1 tsp crushed cardamom seeds, ¼ tsp crushed cloves and 2 tsp cumin seeds
  • 1 onion, peeled and finely grated
  • 1 tbsp each of ground coriander and ground cumin and 2 tsp mild curry powder
  • 3 tsp peeled and finely grated ginger and 3 tsp peeled and finely crushed garlic
  • 200g can chopped tomatoes
  • 1kg skinless and boneless chicken breasts, cut into bite-sized pieces
  • 200ml chicken stock
  • Salt and freshly ground black pepper
  • 5 tbsp fat free natural fromage frais
  • Freshly chopped mint, to garnish

                                                     Method

  1. Spray a large frying pan with low calorie cooking spray and place over a high heat. Add the bay leaves, cinnamon stick, cardamom seeds, cloves, cumin seeds and onion and stir-fry for 5-6 minutes.
  2. Add the ground coriander and cumin, curry powder, ginger, garlic and tomatoes and stir-fry for another 3-4 minutes
  3. Put the chicken into the pan and pour over the stock. Bring to the boil, season well, cover tightly, reduce the heat to low and allow to simmer gently for 20-25 minutes, stirring occasionally.
  4. Remove the pan from the heat and stir in the fromage frais. Serve immediately garnished with chopped mint.
